All Front Quarter Cuts

Fore shank, blade, clod, brisket, braising ribs, chuck short ribs, ribeye/rib steak, and back ribs.

All Hind Quarter Cuts

T-bone, tenderloin, striploin, flank, top sirloin, picanha, inside/outside round, eye of round, sirloin tip.

Hind Shank (Osso Bucco)

Sliced for classic braised Osso Bucco from both sides.

Brisket β€” Both Sides

Two full briskets. Smoke them, braise them, or slice into pieces.

Ribeye β€” Both Sides

Boneless ribeye or bone-in rib steak from both ribs. Cut to your thickness.

Ground Beef

Medium or lean, packed from 1 lb up. The most ground beef you'll ever have at once.

Fat & Bones

Keep all fat and bones for stock and rendering β€” or have it all removed.

Add-On Processing

6oz burgers, cevapi, or all-beef sausage (extra cost). Available on any share size.
