T-Bone or Tenderloin & Striploin
Your choice — T-bone whole or separated tenderloin and striploin, cut to your spec.
Flank Steak
Left whole or cut into strips. Great for marinating and grilling hot and fast.
Top Sirloin
Steaks or roasts — one of the most popular cuts. Great on the grill or oven roasted.
Picanha
The flavourful cap from the top sirloin. Usually left whole — Brazilian BBQ favourite.
Inside & Outside Round
Stew, cutlets, or roasts on the inside. Best for roasts on the outside round.
Eye of Round & Sirloin Tip
Medallion steaks or roasts. Sirloin tip works great as steaks or a whole roast.
Hind Shank (Osso Bucco)
Sliced for Osso Bucco — excellent for braising in red wine or tomato.
Ground Beef
Medium or lean, packed as small as 1 lb. Add-on burgers, cevapi, or all-beef sausage available.
Fat & Bones
